Abstract
The United Nations Sustainable Development Goal “End hunger, achieve food security, improve nutrition, and promote sustainable agriculture” addresses the complex linkages between agricultural practices, environmental sustainability, and food security. Efforts to meet this goal are threatened by the polycrisis of climate change, economic volatility, and geopolitical instability, which affect food systems. It is therefore important to build resilience and advance our collective understanding of sustainable food environments and healthy, nutritious, and secure diets. This research area is crucial for addressing the interplay among agricultural practices, environmental sustainability, food security, and food environments in building resilient food systems. In 2019, the Food and Agriculture Organization (FAO) and the World Health Organization (WHO) agreed on a definition of sustainable healthy diets, aligned with the need to reduce environmental and climate footprints while ensuring food security in the face of climate change and biodiversity loss (FAO/WHO, Several studies (e.g.,) define food security as being interlinked with the conceptualization of sustainable and healthy diets, which are defined as “those that include sufficient amounts of safe and nutritious food and protect against malnutrition and disease”.
